This extraordinarily complex cup of coffee brings with it a tart citric fruitedness with elements of peach and apricot sweetness. The aromatic floral scent of lilacs and black tea combine with the clean fruited aftertaste to provide an enjoyably complex cup that remains interesting even as it begins to cool. Pour-overs will maximize the aromatics of this roast, while a french press will bring out more of the deeper caramelized sugars and strong stone fruit sweetness. This bean would make a very wild and intense single origin espresso.

 

Origin

A rare choice for us, this bean comes from a cooperative in Ethiopia. While many cooperatives can fail because of lack of integration, this cooperative has proven itself over the years and has developed a fully sustainable local model. Their transparency allows us to be comfortable buying from them knowing that their beans come from reliable local farms and that those farmers are getting their fair price from our purchase. The strength of the cooperative ensures that they can produce and process the highest quality beans in a sustainable way that strengthens the local economy.
